Why we're building the internet's home for two dishes

Ask anyone who grew up on it: dal isn't a side dish. It's the daily engine of a hundred million kitchens — cheap, high-protein, endlessly variable, and almost impossible to get sick of. Paneer is its perfect partner: fresh cheese you can make at home in forty minutes and cook a dozen different ways by Friday.

And yet, online, both get treated as items #37 and #52 on someone's '100 Best Indian Recipes' list. Nobody owns these two dishes. Nobody catalogues every dal the way wine people catalogue grapes. Nobody tells you who makes the best dal makhani within five kilometres of where you're standing. That's the gap this site exists to fill.

The plan has three verbs. Learn: the Dal Index and Paneer School — reference-grade guides to every lentil and every paneer technique. Cook: recipes tested until they work in a normal kitchen with normal patience. Find: a map of the spots around you that do these dishes right, eventually rated dish-by-dish by the people who actually ate there.

Further out, there's a fourth verb: order. We ran a small dal-and-paneer meal business before this site, and the thing customers loved most wasn't any single dish — it was not having to think. Set up your week once, and dinner shows up when it's supposed to. We're rebuilding that idea properly, with restaurant partners doing the cooking. It's early. The map runs on sample data while we seed the real thing, ratings haven't shipped, and most of the photography is borrowed (with thanks) from Wikimedia Commons until our own shoots land. But the direction is set — two dishes, one home. Welcome to it.
