The Dal Index: cataloguing every dal, one honest entry at a time
Every dal entry answers the same four questions: how long does it take, what texture does it cook to, what does it taste like, and what is it best at. That's it. No hundred-word intros about someone's grandmother — just the reference facts, checked against real pots on real stoves.
The structure matters because dals genuinely behave differently. Masoor collapses into cream in fifteen minutes flat. Chana holds its bite through an hour of simmering. Whole urad wants an overnight soak and pays you back with the deepest, silkiest dal there is. Once you know each lentil's character, half the recipes on the internet stop being necessary — you can improvise.
The index starts with the big six: toor, moong, masoor, urad, chana, and panchmel (the Rajasthani five-dal mix that's really a philosophy). Regional dals and heirloom varieties join as we can test them properly. If there's a dal you think we're missing, tell us — the whole point of a field guide is that it grows.
